I am forcing myself to go and get weighed today. I know its going to be horrible, but I have to do it or the wondering will make me eat... I know that's crazy, but it always does. I always get on that whole "Oh I am so terrible" bandwagon and then end up eating all the pies because I 'think' I have put on weight so I might as well continue. Its a stupid idiotic way to look at things, but I cant change it. It really is mental.

So I am going to face the damage and just go with it and sort it out this week.

Ok, it was not good, but it could of been much much worse. I also have the painters in again, so that always gives me a couple of extra pounds to lug around.

It was a 3 and a half pound gain this week.

I am right back on it though... and to be honest, I wonder what I would be now had I not been doing the diet for the last 2 weeks... it keeps me on the straight and narrow. I would have been way off course had I not been.

So today's food was
scrambled egg and baked beans for brekkie
beetroot for lunch
sweet potato and lentil curry and rice for dinner.

I am tending to go for *wet* foods. I don't know why, but it seems that because this means I get to actually eat without worrying about puking, I take the safe option. I don't have too much trouble eating normal foods, but I just hate that feeling so much that I choose the soft option.

Changing the subject...
I am rolling with a whole new concept for DS's education. I am finding that scheduled and timed lessons are not doing it for us as a family. DS, as he gets older, is seeming to want to look elsewhere for information about his interests and they don't come from textbooks. They are very much hands on and what is happening is that he spends his day doing Maths, English, spellings and handwriting and science etc and then by the time he has finished that, what he really wanted to do that day is impossible because of time constraints. This, to me, smacks of school all over again. This was the problem I had with school in the first place. Kids don't have enough time to follow their dreams and desires and interests to the full.

Think of the things that you do well, that you like to do, that you're good at. (Things from your vocation, or hobbies, or -- anything).

How many of them did you learn in school?
How many of them were forced on you?

How many did you acquire by your own interest and curiosity?
How many of them did you work hard at because you had interest?

If your initial answers aren't glaringly obvious, ask these same questions of your spouse, your neighbours, your friends, your family.

I know that when I answer these questions I find it pretty darn amazing.

*I play the piano (learnt privately because I wanted to) .
*I teach piano - because I love kids, I taught myself how to do it... I didn't do a course in it. One day I needed a job and thought.. "Hey! I can teach piano!" and put an ad in a corner shop. that was 13 years ago.
*I do my own UV Gel nails - I begrudged the £30 a fortnight and 2 hours in a salon, so I thought "stuff that" and learnt to do it on my todd and now I do other friends too... who pay me to boot!! HA HA
*I make my own clothes, curtains, table cloths etc. I learnt from my Mum on her old 'Singer' making clothes for my dolls and teds (and for some reason endless amount of slippers). None of them fitted right ever. I progressed to bags and long skirts... following patterns etc and now I can do whatever you want me to do. I even made a fully working multi layered Roman blind which would have cost about £500 had I had to buy it!
*I learnt to type. All by myself
*I learnt to drive
*I learnt to cook from the age of about 2. I cooked a full 3 course meal for my mum and dad at 9. I cant believe I never let DS even have a go at that yet!! Who cares if its burnt really.
*I learnt to keep a house
*I learnt to navigate road maps
*I built a swimming pool for Goodness sake!

I even learned how to fill in the self assessment tax form. Tax doesn't have to be taxing... but it IS! What a joke. If I can do that without learning it at school...

There are seriously hundreds of things that I can do that I never learnt in school. They never even teach it in school. Knitting, crochet, darning, sewing, proper cooking (not some yucky half baked crumble or manky lasagna), wallpapering, painting, putting up a fence, training a dog, washing clothes so that they come out right afterwards, running a house and shopping, first aid, balancing a cheque book, using a computer, bringing up an baby, being a wife.

I am going to follow this philosophy with DS for a while. He can read well, add up and take away well, knows loads of stuff... why do I need to cram his brain full of useless muck which he will never use... or if he does, can find out easily for himself with the website google?

For one thing, the timetables and crap are NOT working... all I do is get stressed because he daydreams all day long whilst holding a pen and I am like some horrible warden jailer "BOY!!!! DO YOUR WORK!!!" at which he rapidly scrambles to it until I turn my back. That's not how its supposed to be. That's horrible.

I am my sons worst nightmare.

DS loves animals. He loves cooking. He loves outdoor stuff. We never get to do this because he is doing other stuff which he hates.

So stuff it. We are gonna do stuff he likes and see what happens.

So begins our phase of autonomous child led education.

The American Contingent

We have had a lush couple of days with my American Cousins. They are going home tomorrow sadly, but we have had such a lot of fun! What is even sadder is that I have eaten for the whole of the English Contingent... OOOooops.

Oh well, a few days off in the course of things will change the scales for a week or so, but my mind set is still there.

Its impossible to be a goody two shoes when there are people having a visit. Marcie and Linda are so lovely. They are such sweeties and so enthralled by everything you show them that its such a joy to have them about.

We went to a lovely market town and went around a museum of Oliver Cromwell's House and then to a tiny little pub by a back water fen that was really great. I have never been to these places either, so it always gives me a good excuse to get of my butt and go and do something.

They are my 7th cousins, and we found each other when doing genealogy regarding our weird surname, and it has been fab just getting to know half of a family again. We have been there, and they have been here and so on and its been lovely. There are still such striking resemblances between us that its amazing.

Anyway, I have had a diet of dinners out... currys and cakes, biscuits and cakes, wine and cakes and oh I don't know, more cakes?

So its not going to be pretty, but then again at least I can get in control again.

I think actually, I need another fill. I am able to eat pretty much what I want again and I don't get that completely stuffed feeling either... Like tonight we went to a buffet - all you can eat Indian restaurant - and I went up 3 times!!! I didn't have to do that, but I could. We all know what that means right?

Anyway, I will think about that later. Right now I cant be bothered and I am gonna go to bed.

Butter, Margarine and Heart Disease

Shortly after World War II, margarine replaced butter in the U.S. food supply. Margarine consumption exceeded butter in the 1950s. By 1975, we were eating one-fourth the amount of butter eaten in 1900 and ten times the amount of margarine. Margarine was made primarily of hydrogenated vegetable oils, as many still are today. This makes it one of our primary sources of trans fat. The consumption of trans fats from other sources also likely tracked closely with margarine intake.


Coronary heart disease (CHD) resulting in a loss of blood flow to the heart (heart attack), was first described in detail in 1912 by Dr. James B. Herrick. Sudden cardiac death due to CHD was considered rare in the 19th century, although other forms of heart disease were diagnosed regularly by symptoms and autopsies. They remain rare in many non-industrial cultures today. This could not have resulted from massive underdiagnosis because heart attacks have characteristic symptoms, such as chest pain that extends along the arm or neck. Physicians up to that time were regularly diagnosing heart conditions other than CHD. The following graph is of total heart disease mortality in the U.S. from 1900 to 2005. It represents all types of heart disease mortality, including 'heart failure', which are non-CHD disorders like arrhythmia and myocarditis.

The graph above is not age-adjusted, meaning it doesn't reflect the fact that lifespan has increased since 1900. I couldn't compile the raw data myself without a lot of effort, but the age-adjusted graph is here. It looks similar to the one above, just a bit less pronounced. I think it's interesting to note the close similarity between the graph of margarine intake and the graph of heart disease deaths. The butter intake graph is also essentially the inverse of the heart disease graph.

Here's where it gets really interesting. The U.S. Centers for Disease Control has also been tracking CHD deaths specifically since 1900. Again, it would be a lot of work for me to compile the raw data, but it can be found here and a graph is in Anthony Colpo's book The Great Cholesterol Con. Here's the jist of it: there was essentially no CHD mortality until 1925, at which point it skyrocketed until about 1970, becoming the leading cause of death. After that, it began to fall due to improved medical care. There are some discontinuities in the data due to changes in diagnostic criteria, but even subtracting those, the pattern is crystal clear.

The age-adjusted heart disease death rate (all forms of heart disease) has been falling since the 1950s, largely due to improved medical treatment. Heart disease incidence has not declined substantially, according to the Framingham Heart study. We're better at keeping people alive in the 21st century, but we haven't successfully addressed the root cause of heart disease.

Was the shift from butter to margarine involved in the CHD epidemic? We can't make any firm conclusions from these data, because they're purely correlations. But there are nevertheless mechanisms that support a protective role for butter, and a detrimental one for margarine. Butter from pastured cows is one of the richest known sources of vitamin K2. Vitamin K2 plays a central role in protecting against arterial calcification, which is an integral part of arterial plaque and the best single predictor of cardiovascular death risk. In the early 20th century, butter was typically from pastured cows.

Margarine is a major source of trans fat. Trans fat is typically found in vegetable oil that has been hydrogenated, rendering it solid at room temperature. Hydrogenation is a chemical reaction that is truly disgusting. It involves heat, oil, hydrogen gas and a metal catalyst. I hope you give a wide berth to any food that says "hydrogenated" anywhere in the ingredients. Some modern margarine is supposedly free of trans fats, but in the U.S., less than 0.5 grams per serving can be rounded down so the nutrition label is not a reliable guide. Only by looking at the ingredients can you be sure that the oils haven't been hydrogenated. Even if they aren't, I still don't recommend margarine, which is an industrially processed pseudo-food.

One of the strongest explanations of CHD is the oxidized LDL hypothesis. The idea is that LDL lipoprotein particles ("LDL cholesterol") become oxidized and stick to the vessel walls, creating an inflammatory cascade that results in plaque formation. Chris Masterjohn wrote a nice explanation of the theory here. Several things influence the amount of oxidized LDL in the blood, including the total amount of LDL in the blood, the antioxidant content of the particle, the polyunsaturated fat content of LDL (more PUFA = more oxidation), and the size of the LDL particles. Small LDL is considered more easily oxidized than large LDL. Small LDL is also associated with elevated CHD mortality. Trans fat shrinks your LDL compared to butter.

In my opinion, it's likely that both the decrease in butter consumption and the increase in trans fat consumption contributed to the massive incidence of CHD seen in the U.S. and other industrial nations today. I think it's worth noting that France has the highest per-capita dairy fat consumption of any industrial nation, along with a comparatively low intake of hydrogenated fat, and also has the second-lowest rate of CHD, behind Japan.

Leptin Resistance and Sugar

Leptin is a major hormone regulator of fat mass in vertebrates. It's a frequent topic on this blog because I believe it's central to overweight and modern metabolic disorders. Here's how it works. Leptin is secreted by fat tissue, and its blood levels are proportional to fat mass. The more fat tissue, the more leptin. Leptin reduces appetite, increases fat release from fat tissue and increases the metabolic rate. Normally, this creates a "feedback loop" that keeps fat mass within a fairly narrow range. Any increase in fat tissue causes an increase in leptin, which burns fat tissue at an accelerated rate. This continues until fat mass has decreased enough to return leptin to its original level.

Leptin was first identified through research on the "obese" mutant mouse. The obese strain arose by a spontaneous mutation, and is extremely fat. The mutation turned out to be in a protein investigators dubbed leptin. When researchers first discovered leptin, they speculated that it could be the "obesity gene", and supplemental leptin a potential treatment for obesity. They later discovered (to their great chagrin) that obese people produce much more leptin than thin people, so a defeciency of leptin was clearly not the problem, as it was in the obese mouse. They subsequently found that obese people scarcely respond to injected leptin by reducing their food intake, as thin people do. They are leptin resistant. This makes sense if you think about it. The only way a person can gain significant fat mass is if the leptin feedback loop isn't working correctly.

Another rodent model of leptin resistance arose later, the "Zucker fatty" rat. Zucker rats have a mutation in the leptin receptor gene. They secrete leptin just fine, but they don't respond to it because they have no functional receptor. This makes them an excellent model of complete leptin resistance. What happens to Zucker rats? They become obese, hypometabolic, hyperphagic, hypertensive, insulin resistant, and they develop blood lipid disturbances. It should sound familiar; it's the metabolic syndrome and it affects 24% of Americans (CDC NHANES III). Guess what's the first symptom of impending metabolic syndrome in humans, even before insulin resistance and obesity? Leptin resistance. This makes leptin an excellent contender for the keystone position in overweight and other metabolic disorders.

I've mentioned before that the two most commonly used animal models of the metabolic syndrome are both sugar-fed rats. Fructose, which accounts for 50% of table sugar and 55% of high-fructose corn syrup, is probably the culprit. Glucose, which is the remainder of table sugar and high-fructose corn syrup, and the product of starch digestion, does not have the same effects. I think it's also relevant that refined sugar contains no vitamins or minerals whatsoever. Sweetener consumption in the U.S. has increased from virtually nothing in 1850, to 84 pounds per year in 1909, to 119 pounds in 1970, to 142 pounds in 2005 (source).

In a recent paper, Dr. Philip Scarpace's group (in collaboration with Dr. Richard Johnson), showed that a high-fructose diet causes leptin resistance in rats. The diet was 60% fructose, which is extreme by any standards, but it caused a complete resistance to the effect of leptin on food intake. Normally, leptin binds receptors in a brain region called the hypothalamus, which is responsible for food intake behaviors (including in humans). This accounts for leptin's ability to reduce food consumption. Fructose-fed rats did not reduce their food intake at all when injected with leptin, while rats on a normal diet did. When subsequently put on a high-fat diet (60% lard), rats that started off on the fructose diet gained more weight.

I think it's worth mentionong that rodents don't respond to high-fat diets in the same way as humans, as judged by the efficacy of low-carbohydrate diets for weight loss. Industrial lard also has a very poor ratio of omega-6 to omega-3 fats (especially if it's hydrogenated), which may also contribute to the observed weight gain.

Fructose-fed rats had higher cholesterol and twice the triglycerides of control-fed rats. Fructose increases triglycerides because it goes straight to the liver, which makes it into fat that's subsequently exported into the bloodstream. Elevated triglycerides impair leptin transport from the blood to the hypothalamus across the blood-brain barrier, which separates the central nervous system from the rest of the body. Fructose also impaired the response of the hypothalamus to the leptin that did reach it. Both effects may contribute to the leptin resistance Dr. Scarpace's group observed.

Just four weeks of fructose feeding in humans (1.5g per kg body weight) increased leptin levels by 48%. Body weight did not change during the study, indicating that more leptin was required to maintain the same level of fat mass. This may be the beginning of leptin resistance.

The Fundamentals

I heard an interview of Michael Pollan yesterday on Talk of the Nation. He made some important points about nutrition that bear repeating. He's fond of saying "don't eat anything your grandmother wouldn't recognize as food". That doesn't mean your grandmother specifically, but anyone's grandmother, whether she was Japanese, American or African. The point is that commercial food processing has taken us away from the foods, and traditional food preparation methods, on which our bodies evolved to thrive. At this point, we don't know enough about health to design a healthy synthetic diet. Diet and health are too complex for reductionism at our current level of understanding. For that reason, any departure from natural foods and traditional food processing techniques is suspect.

Mainstream nutrition science has repeatedly contradicted itself and led us down the wrong path. This means that traditional cultures still have something to teach us about health. Hunter-gatherers and certain other non-industrial cultures are still the healthiest people on Earth, from the perspective of non-communicable disease. Pollan used the example of butter. First we thought it was healthy, then we were told it contains too much saturated fat and should be replaced with hydrogenated vegetable margarine. Now we learn that trans fats are unhealthy, so we're making new margarines that are low in trans fats, but are still industrially processed pseudo-foods. How long will it take to show these new fats are harmful? What will be the next industrial fat to replace them? This game can be played forever as the latest unproven processed food replaces the previous one, and it will never result in something as healthy as real butter.

The last point of Pollan's I'll mention is that the world contains (or contained) a diversity of different cultures, living in dramatically different ways, many of which do not suffer from degenerative disease. These range from carnivores like the Inuit, to plant-heavy agriculturalists like the Kitavans, to pastoralists like the Masai. The human body is adapted to a wide variety of foodways, but the one it doesn't seem to like is the modern Western diet.

Pollan's new book is In Defense of Food. I haven't read it, but I think it would be a good introduction to the health, ethical and environmental issues that surround food choices. He's a clear and accessible writer.

Not thinking about her imminent departure at all...!!!!

She is leaving in the morning apparently. All her stuff is still in the cupboard though. This morning she woke the whole house up at 5am by having a shower. Its obviously she does it on purpose to piss people off. So I wonder if she will start packing at about 3am or something MAD. To be honest I don't give a rats bum what she does. I have given her the invoice and now shes going. That's it.

I made a lovely dish for tonight's tea...

serves 4

4 chicken breasts
1/2 pint of aduki beans (soaked overnight)
1 can of chopped tomato
1 onion
1 clove garlic
2 large carrot-size sweet potatoes cut up small
1tsp All Spice/Mixed Spice
1/2 tsp crushed chilli
2tbsp olive oil
1tbsp sesame oil
1 chicken stock cube
lots of coconut cream powder

Put the chicken breasts on a tray and cover with foil and roast.

You boil the beans for 40 minutes in the stock. Keep adding water as it seems to evaporate.
Then in another pan fry the onions in the oils and add the spices. once softened add the garlic and fry a little further. Then add the chopped tomato and sweet potato and all the beans/stock mixture and mix it all up and bring to the boil. Again add water just enough so that when you press down there is a little free sauce. then keep simmering and adding water until the sweet potato is cooked. (this is not supposed to be watery btw!) then when cooked turn off the heat and stir in as much coconut cream powder as you like and serve it with the roasted chicken. DELICIOUS

She's GAAAAAWWWWNNNN

Oh, I feel sick with pleasure!

Oh my goodness, I feel like I am going to explode with happiness

I told the stupid COW that it wasn't working out - understatement I know - and she just rolled over and said that was fine and she would move out no worries.

She goes on Wednesday! How cool is that? I was so stressed about this situation, and now its finally over I am so drunk on the love I have for sweet justice that its just unreal.

This evening, if I had had any doubts in my mind whatsoever, then what follows sorted that...

I served a lovely soup for starter... Potato and Caraway. Everyone except her ate the lot and wiped the bowl clean with their roll. She had 1 teaspoon. Actually thats exaggerating a little... she had half a teaspoon.

Then the main was roasted veg (sweet potato, parsnip, onion, pepper) with a garlic and tomato sauce and green salad:
We have always ALWAYS eaten as a family. It doesn't matter who you are, if you come to our house, and its dinner time, you eat with us and you're at at the table. With the lodgers... I mean we don't really know who any of them are and its a chance to get to know each other and share the day and be sociable... Beeeyatch from hell has tried to schlep on us many times and today she just wasn't going to get away with it. So after pushing the soup about with her spoon and looking like she would vomit at any moment just for being around us she announces as I am dishing up the main course:

AMY: "I will eat my main in my room"
Me: "Actually do you mind not eating in your bedroom as I would rather the furniture not be ruined"
AMY: "I'm not going to eat it on the bed, I will sit at the desk!!! "
Me: "Yeah, but I would still rather you didn't."
AMY: *roll eyes* "fine. I will eat on the sofa later"
Me: "Hmmm, same thing really. Can you eat at the table like (A NORMAL HUMAN) usual?"
AMY: "grunt"

What the **** is wrong with her...? I don't know anyone else from Kenya, but seriously she is just off the wall weird. Trying to be nice, I asked her what her favorite food was and she replied:


"Maize and beans - every tribe has their favorite food".

I mean seriously... maize and beans??? Are you joking me? With all the different foods there are available in the WORLD, her favorite food is maize and beans? I like sweetcorn. I like beans. Give them to me as part of a meal and you are rocking. Wow, no wonder she doesn't like Roast chicken breast with Cream, shallot, garlic and bacon sauce served with haricot vert and colcannon. How awful to have to eat my food. The poor cow... how terrible I am!

NOT!!!!!!!!!!!!!

SHUU UP. She has lived in the UK for 4 years. Apparently until she came here she had never had cheese... That's right cheese! I am surprised that someone from Kenya or anywhere in Africa can be that flippant with food. When you consider the fact that there are people starving in her own country, here she sits poking my food about like its some kind of slow poison. Well sorry Lady, you can just sod right off. I have bent over backwards for the cow and she is plainly a selfish, arrogant, pig ignorant, rude, contrary, argumentative wench.

Good riddance and God help your next landlord.

Just in case you tastebuds are tickled by the delicious maize and beans prospect.. here's a recipe for how to make it. Be prepared though... its really difficult, time consuming and hard, but the delicate and refined taste is obviously better that anything that western foods can deliver... be prepared for a taste sensation of your lifetime:

Recipe for Githeri:
1 cup Maize
1 cup Beans (kidney or similar)
Water
Cook equal quantities of maize and beans in water for several hours until soft. Serve alone or with unripe cooked bananas.

She's had hers

Right... Amy has now bitten her last victim and she is going to be out on her bum in the new year. I cant quite bring myself to give her her notice this week... not because its Xmas, but just because I know she wont be able to find anywhere quickly enough as most people wont want to be getting a new lodger right now... So I am going to make the most of the extra cash for 2 weeks then kick the bint out.

I am not going to go into all the details but lets just say, she is nasty to my animals - Gary, Kieth, Steve, Pauline, Mary, Felix, Dave and Dylan the dog. She sprayed air freshener at Dave yesterday to scare him off the surface he was sleeping on! ARGH I WANT TO SPRAY HER! She was nasty to me about my beliefs, had an argument with DS about 12a certificate films - a 10 year old has more knowledge and reason than her. Honestly she is a dumb head.

DS: "We're going to see Yes Man!"
AMY: "Sorry - it's too old for you."
DS: "No its a 12a. 12a's were originally 15's but they changed them"
AMY: "No a 15 is a 15...12a is a 12a."
DS:"Actually, it is a new classification that started with Spiderman. The bbfc wanted it to be a 15, but the writers said that the people who it was aimed at (8-12yr olds) would not be able to watch it, so they changed it to a 12a."
AMY: "A 15 is a 15. DUH!"
DS: "No Amy... its because..."
AMY: "jumping down throat* " Oh just shut up about it. A 12a is NOT a 15 ok! if it was it would have 15 on it. You don't know everything ok?"

Stupid bitch. NO REASON WHATSOEVER

Anyway, got weighed today. I stayed the same weight. I am really pleased with that. TB actually put on the 4 pound she lost last week... that's really sad as I know it really kills her to put on weight. This time of year is really hard for dieters. I don't have that excuse, but still seem to eat loads anyway. So we have really got to do this 100% or at least use damage limitation. after the 2 dinners I had out this week and the wine I have had I am really stoked to still weigh the same, but I tried to eat nothing bad at all on the days where I didn't have to go out. And yes, I do feel pretty darn smug :o))))) So I am still with it, and am surprised that I am too, but have a different mind on this game right now.

Dunno what I am having for dinner tonight... I have had beetroot and salad for lunch.

Omega-6 Linoleic Acid Suppresses Thyroid Signaling

The thyroid gland controls the body's metabolic rate, among other things. It does this by secreting the thyroid hormones triiodothyronine (T3) and thyroxine (T4). As with any other hormone, the tissue response depends on the amount of hormone and the tissue's sensitivity to the hormone.

For example, in type I diabetes, the pancreas doesn't produce enough insulin to move glucose from the blood into tissues. In type II diabetes, often the tissues are so resistant to the action of insulin that glucose is not effectively transported from the blood into tissues, despite high levels of insulin. Both result in excessively high blood glucose after a meal containing carbohydrate.

In the last post, I discussed a study in which rats on different diets, fed equal amounts of calories and omega-3, gained weight in proportion to the omega-6 linoleic acid content of their diets. 1960s men fed a diet high in linoleic acid also gained weight relative to a more typical control diet containing the same number of calories. Rats deficient in linoleic acid develop an abnormally high metabolic rate. This suggests that the metabolic rate may be supressed by linoleic acid, and leads us to the question: does linoleic acid suppress thyroid signaling?

I was first introduced to the idea by Dr. Ray Peat, who suggests that all polyunsaturated fats (PUFA) suppress thyroid signaling (and should be avoided as much as possible). I couldn't find any credible references in his articles, so I went digging around PubMed myself. It turns out, he's right, and it's been known since at least the 1970s.

The first thing I searched for is whether or not linoleic acid reduces the secretion of T3 or T4 by the thyroid gland. It doesn't seem to, although one study I found used Crisco as the "saturated fat" control group (I'm not making this up!). Next, I looked for studies that evaluated the effect of linoleic acid on tissue sensitivity to thyroid hormones. Here's what I found:
  • A corn oil diet greatly suppresses the liver's response to T4 when compared with an equal amount of lard (5% by weight).
  • A safflower oil diet suppresses the liver's response to T3 when compared with an equal amount of beef tallow (10% by weight).
  • A diet high in linoleic acid (undisclosed source) suppresses the response of brown fat and liver to T3.
This is highly significant, since the liver is one of the major sites of thyroid hormone-responsive heat production. The liver and other visceral organs generate heat largely by activating a pump that pushes ions back and forth across the cell membrane, called the sodium-potassium ATPase. It's basically a way to create heat from chemical energy, like rubbing your hands together.

In another study, investigators showed that rats eating a diet containing 20% beef tallow ad libitum ate more, weighed less and carried less fat than rats eating 20% safflower oil. The
liver sodium-potassium ATPase activity of the safflower group was 26% lower, although the result was not considered statistically significant. Serum leptin was much higher in the safflower oil group. High leptin plus low energy expenditure suggests leptin resistance. The safflower group was eating less food, and gaining more weight, probably because linoleic acid was suppressing its ability to generate heat. This may be partly due to inhibition of the sodium-potassium ATPase, as well as the effects of leptin resistance.

In the 1970s, linoleic acid was
being considered as a treatment for hyperthyroidism:
Further studies should reveal the extent to which observed effects of excess thyroid hormone are amenable to control by dietary polyunsaturated fat.
Linoleic acid may interfere with thyroid signaling by inhibiting thyroid hormone binding to its receptor. Not all PUFA are equal in their ability to promote weight gain. Growing mice fed 15% corn oil develop more fat mass than mice fed 10% corn oil plus 5% perilla oil (rich in omega-3 alpha-linolenic acid). The effect can be blocked by knocking out the prostacyclin receptor, which shows that omega-6 derived eicosanoid signaling is responsible for the "excessive adipose [fat] tissue development" in growing mice. This mechanism is different from thyroid signaling.

Add gluten-induced autoimmune hypothyroidism, goitrogens (thyroid inhibitors) in soy, and endocrine disruptors from plastic like bispheonl-A, and you have potent brew that may strongly promote obesity in Western industrial nations.

The treatment? Dump the vegetable oil, wheat, soy, sugar and processed food in favor of the things the human body is equipped to handle: animal fats, root vegetables, vegetables, fruit, meats, organs, seafood, eggs, nuts and soaked or fermented non-gluten grains and legumes. Throw in some bugs if you're feeling adventurous.

Coconut oil can be particularly helpful because it's almost exclusively saturated, so it doesn't interfere with thyroid signaling. That may be why it increases energy expenditure and aids weight loss. Coconut has a long history of use by healthy non-industrial cultures in tropical areas. The medical literature likes to use the euphemism "medium-chain triglycerides" when referring to the saturated fat in coconut oil because it conceals the fact that it's saturated. Low-carbohydrate diets are also very helpful for weight loss, but I'm not sure it's really due to the carbohydrate itself rather than restricting wheat and sugar. I discussed that concept in this post.

Today has been a good day. DS got all his work done which is good. He is at a sleepover this evening, so I think the threat of not being able to got his butt in gear. I got up at midday, which is crazy - Have no idea why I slept so much, but I was obviously whacked for some reason. Had my lunch which was smoked salmon - period. Nothing else, just that. I made DS baked beans on toast (his favorite lunch) and that was it really. I made a tortilla for tea.. Boiled potato slices mixed up with onion, garlic and spinach and a lot of eggs then baked in the oven. I served it with baked beans which were HORRIBLE. Oh man they were disgusting. They kind of taste fishy and tinny... I am so talking them back tomorrow. They are co-op's own brand and they are vile. It completely ruined the dinner as they were like touching the rest of the food and I felt sick. I took a whiff from the tin and it really REEKED.

Strangely enough Amy said "Oh, I didn't notice... it tasted nice". HA! What?!?!?! I mean the horrible cow picks over my delicious lovingly cooked meals like they are freaking poison - but when there is a real threat to her health (seriously they were THAT bad) she thinks they are... NICE???!!!

I just don't get the woman. She is a halfwit I swear to god.

So, nothing has changed over night in this household... I am still on a mission to slimness, DH is gorgeous, DS is beautiful, Sue is posh, Amy is a freaking wierdo & I am about to watch Lovewrecked. Hopefully its good.
